What's everyone eating for dinner? We can't get Instapots over here in AU yet (Booo!), but I'm always looking for easy, filling stuff to cook my family.
So, get to listing your bestest ones! (please?)
I am making this for tonight:
Crock-pot Lasagne
1 box lasagna noodles, unboiled 1 tbsp. olive oil 1/2 onion, chopped 2 garlic cloves, minced 1 lb. ground beef 1 tsp. Italian seasoning 3 1/2 c. marinara sauce, divided kosher salt Freshly ground black pepper 16 oz. whole milk ricotta 1/4 c. freshly grated Parmesan, plus more for garnish 1/4 c. chopped parsley, plus more for garnish 4 1/2 c. shredded mozzarella
1. In a large skillet over medium heat, heat oil. Add onions and cook until translucent, 3-4 minutes. Add garlic and cook until fragrant, 1 minute. Add beef and season with salt, pepper and Italian seasoning. Cook until no pink remains and add 3 cups of the marinara, stirring to combine and cooking 2-3 minutes more. 2. In a large bowl, combine ricotta with parmesan and parsley. Season with salt and pepper and stir until fully incorporated. 3. Grease the bowl of your slow cooker with a nonstick cooking spray. Using the remaining marinara, spread a thin layer on the bottom of the crock pot. Next add a layer of noodles (you’ll have to break some to make them fit) a layer of meat mixture, a layer of mozzarella, and a layer of ricotta. Repeat until all ingredients are used up, ending with mozzarella. Cover and cook on low for 4 to 5 hours. 4. Garnish with more parmesan and parsley and serve.

We had a clean the fridge kind of dinner. Choices were meatloaf, taco salad, chicken enchilada's. Have no idea what I'm going to do for tonight. I feel like I should make it a little bit special for Valentine's Day, but will have to check out the freezer.

Lately I've been putting pickled banana peppers on things. Salads especially. When I went shopping yesterday I got a HUGE jar, so I'll probably get bored with them soon.

I just got an instapot and love it. I made lasagna and it turned out great... I use my homemade marinara. The lasagna also freezes well, and actually taste better later too. Penelope’s recipe is almost identical to what I do....
When I use the pressure cooker I get a kick out of using the quick vent. Scares the hell out of the cat though...🤭

Scares the hell out of the cat though...🤭 That recipe was THE best lasagne I made in my entire life! I loved it and the family devoured the whole thing in one sitting. Apparently, I must make it again immediately, but may be next week... We don't have Instapots here - and I asked the company whether they intend to sell here and NZ, and they didn't even answer - they're mad, heaps of people want them. We have other brands, but are they as good, I ask to myself? I just don't know. So, if I really, really want one, I have to buy one from the UK, because they have the same power voltage as us (US doesn't) and then spend a fortune on postage *sigh*. Still, the crock pot/slow cooker has done me well up to now, so it will have to do for a while yet.

Just saying.
Two words. Instant Pot. :-)
There are several companies that make electric pressure cookers. That's all an Instant Pot is, and all the others work exactly the same way.

Humblest apologies Sally Yeah...we have a few here that are similar, but they have very few or no recipe pages etc. Would the Instant Pot Recipes work the same in another brands pressure cooker pot, do you think?

Almost certainly yes. The controls might be slightly different, and they might call things by different names, but yes.

To elaborate on that a little bit, electric pressure cookers typically have a setting that brings it to 15 pounds of pressure (on an Instant Pot that is called "manual" and "normal" - I think). My IP has a setting that does low pressure as well. That's just extra and doesn't really matter much.
My IP also has a lot of preset programs. Those are completely unnecessary, but handy. I have a yogurt setting to boot and many of them don't.
But the basic thing is simply put the food in the pot, put on the lid, make sure the valve is closed and set it to pressurize for X minutes. Then either let the pressure subside naturally or do a quick release.
That's all there is to it. They are actually quite simple.

I reheated some leftover pepper steak and rice on the stove in a stainless steel pan.
Then I had a candy bar. No cooking involved.

Sally, after your Instant Pot blog I bought an electric pressure cooker for my sister. She loves to cook and like me, was too nervous to try a regular pressure cooker. It took her quite a while to use it and she's still learning, but she loves it! I'll be borrowing hers soon. Thanks for all the cool things you write about.

I've been using my Instant Pot a lot more lately. I was getting tired of not using it and had to seek out things to try, or sell it. I made a very good pot roast in it last night. I have learned that sauteing first makes a huge difference in building pressure time, and in flavors. I will saute onions or whatever, and add seasoning to it for a couple of minutes before I add the main ingredients. I did not like the first roast I made in it, so was happy to finally figure it out right last night.
