They would benefit with an instant pot or any number of small appliances but let's face it, that's not how they are cooking. But seriously, food doesn't have to look like hog slop coming off of a wood stove or a fire though. Like anything, a meal is all what you put into it; ingredients and effort. They could be cooking more nutritious and certainly better looking food and still stay on a budget. Nicole is just lazy and leaves it up to the kids to try and throw together whatever they can from what ever poor ingredients she drops in their laps. I'd venture to say that none of them have ever had any real instruction in the kitchen although what a fantastic homeschooling idea, Nicole; Home Economics- ever hear of it? Here's a wood stove meal. Not a wood cook stove, but a regular flat top wood heater. Tastes great, nutritious, and looks pretty good I think. Cost? Pennies. I figured what it would cost to feed this meal to 12 people. $4.50 tops, no meat. Add chicken, likely about $7.00 max if you load it. It took one skillet with the lid flipped top side down. Rice in the pan, veggies in the lid. Cast iron works best but stainless works too.

I love my cast iron pans. Imagine my excitement when I discovered I didn’t need a baking stone to bake bread. I use my small griddle... works perfect.

Easy day today. One of our stores has a deal on rotisserie chickens for $5 each. I use an entire chicken to make a basic chicken salad which gets entirely used up in my smallish family.

We quit ordering from Papa John's between their failure to pay their workers a living wage and insurance, and the fiasco re;kneeling & the national anthem. Have been trying to keep the pizza money local, so ordered last night from a place we haven't used in awhile. They morphed with a BBQ place, so now it is pizza & ribs. I ordered a BBQ brisket pizza, hands down favorite with all of us in my house.

This weekend I've been busy colluding, conspiring, personally meeting with others and probably catching every single cold and flu strain out there. Tonight's dinner is canned chili over instant rice, with Diet Coke and perhaps tons of Easter candy for dessert. I would share pictures but I'm too lazy to go get the camera and I'm eating directly out of the pot it was cooked in so you know it looks just as elegant and klassy as it sounds.
